Healthy Chicken Casserole

It’s a veggie and chicken overload! Have a deliciously well-balanced meal with this recipe.



2 cups Sapporo Long Kow Vermicelli, cooked

1 cup grilled chicken breast, chopped

⅓ cup carrots, peeled & cubed

⅓ cup broccoli florets

⅓ cup sweet potato, peeled & cubed

½ cup french beans

1 pc. medium-sized red onion, quartered

2-3 tbsp. olive oil

2 tbsp. cranberries

2 tbsp. cashew nuts, roughly chopped

salt & pepper, to taste


  1. Preheat oven to 400º F.
  2. Toss together all vegetables with olive oil, salt and pepper.
  3. Transfer to tray and roast vegetables for 10-12 minutes or until semi-charred.
  4. In another bowl, put vermicelli and drizzle with olive oil. Season with salt and pepper. Toss in vegetables with the vermicelli.
  5. Top with cranberries and cashew nuts.
